If it’s a battle where you’d normally gain Experience Points, it’s a battle you’ll gain Effort values from - so fights against other players or in facilities like the Battle Tower, Battle Frontier, etc. Your Pokémon gain them when they fight against other Pokémon, whether it’s a wild battle or a Trainer battle. Think of Effort Values - EVs - like Experience Points. Officially, these are referred to as base stats or base points in-game, but almost no one uses that terminology and it is also confusing given the more widely understood definition of base stats that you will see listed on Pokémon fansites Pokédex pages - the base values for each stat that determine how strong a given species of Pokémon is.
